The Croque Monsieur

Ingredients
¾ LBS. Queen City Sausage Premium Smoked Ham. Sliced thin
8 Slices of thick bread
3/4 LB Grated white cheddar cheese
4 Large eggs
1 ½ Cups of whole milk. Heated
2 TBS. Butter
2 TBS Flour
2 TBS Olive oil
Mustard
Salt
Pepper
Yields 4 Servings


Instructions for Sauce
Melt the butter in a medium saucepan. Stir in the flour and cook on medium-low, stirring constantly until the paste cooks and slightly bubbles. Do not let the mixture brown. About two minutes. Add the hot milk and continue stirring. Sauce thickens. Bring it to a boil. Add salt and pepper. Lower the heat and keep stirring for 2 minutes. Remove from heat. Cover. Add 2/3 of the grated cheese. Consistency should be thick, yet pourable.

Instructions for Sandwich
Medium skillet. Medium -low heat. Add 4 slices of bread. Add mustard evenly to each slice. Add ham. Add remaining cheese. Add 4 remaining slices of bread. Fry 4 eggs sunny side up in a separate skillet. Pour the cheese mixture over the assembled sandwich. Top the sandwiches with the fried eggs and serve.
