Goetta Breakfast Quesadillas
Ingredients
1 LB. Queen City Goetta. Fried crisp and crumbled
10 OZ Shredded sharp cheddar cheese
6 Large eggs. Scrambled
3 Tortillas
1 Cup Black beans
¼ TSP Salt
¼ TSP Coarse ground pepper
1 Cup Spinach
Yields 3 Quesadillas
Instructions
Medium non-stick skillet, medium-high heat. Brown the goetta and crumble. Medium non-stick pan, medium heat, add the eggs for one serving (of 3). Add salt and pepper. Quickly add a tortilla on top of the egg mixture, followed by 3 OZ shredded cheese. Flip the tortilla. Add goetta to one side along with spinach and black beans. Fold over and serve. Repeat the assembly for the remaining two.
