Griddled Smoked Sausage Cakes

Ingredients
4 Links—Queen City Sausage Skinless Smoked Sausage. Diced
1 Large Yukon potato
1 ½ Cup Breadcrumbs
¼ Cup Flour
¼ Cup Chopped parsley
¼ Cup Finely chopped scallions
¼ Cup Sour cream
¼ TSP Cayenne pepper
1 TSP Sea salt
Freshly ground black pepper
4 OZ Olive oil
Yields 6 Patties

Instructions
Wrap potato in plastic wrap. Be sure to pierce the potato in several places to cook properly. Microwave the potato for 8 minutes, on high. This to soften for mashing. Let cool then mash. Add the breadcrumbs to a plate. Brown the diced sausages in a non-stick skillet with olive oil. Remove and cool. In a medium bowl combine the mashed potato, parsley, scallion, sour cream, cayenne pepper, salt, and pepper. Mix well. Form the batter into 6 patties, then dredge through the breadcrumbs. Medium non-stick skillet. Medium heat. Add the olive oil. Add the patties to the skillet to thoroughly brown both sides. Add more olive oil if needed. We wanted to avoid a deep fry due to excess oil.
