Smoked Sausage Cowboy Caviar
Ingredients
4 Links—Queen City Sausage, Smoked Sausage. Diced
2 Roma tomatoes. Diced
½ Red bell pepper. Diced
1 Small onion. Diced
½ Avocado. Diced
1-15 OZ Can of corn. Drained
1-15 OZ Can of black beans. Drained
1 15-OZ can of chic peas
½ Cup of cilantro. Chopped
¼ Cup of Italian dressing
3 Cloves of garlic cloves. Pressed
¼ Cup of Craisins (Optional)
2 OZ Olive oil
Yields 6 Servings
Instructions
Medium skillet, medium heat. Add olive oil and sausages to brown. Set aside. Mix all the ingredients together including the sausage. Blend well. Add the dressing and serve.
