BEER CHEESE DIP with SMOKED SAUSAGE

Ingredients

·         4 Links Queen City Sausage-Beef Smoked Sausage, or favorite.  Slice ¾” on the bias

·         12 OZ Favorite beer

·         6 OZ Shredded fontina cheese

·         6 OZ Shredded sharp cheddar cheese

·         ½ Cup finely cut onion

·         ¼ Cup All purpose flour

·         ¼ Cup unsalted butter

·         ¼ Cup Half and half

·         1 TSP Dijon mustard

·         ½ TSP Worcestershire sauce

·         2 TBS Horseradish

·         Chopped chives for topping

Directions

1.       Medium saucepan.  Melt butter.  Medium-low heat.  Add the onions.  Stir.  About 5 minutes

2.       Whisk in the flour, whisking continuously until lightly browned

3.       Gradually whisk in the ½ and ½ and beer

4.       Reduce the heat to low.  Add the cheeses.  Whisk constantly.  Remove from heat

5.       Whisk in the Worcestershire sauce, Dijon mustard, and horseradish

6.       Garnish with chives
