HOMEMADE PICKLING TOPPINGS

Ingredients

·         1 Small cucumber.  Sliced into chips

·         ½ Red pepper.  Sliced

·         ½ Cup Carrots.  Shredded or chips

·         ¼ Cup Sliced shallots

·         ¼ Cup Red onions, sliced

·         2 Garlic cloves

·         2 TBS Mustard seed

·         1 TBS Honey or maple syrup

·         1 TBS Crushed red pepper (Optional)

·         1 TSP Ground ginger

·         1 Cup White vinegar

·         1 Cup Water

Directions

1.       Place all vegetables and spices in a 24 OZ jar.  Add the honey

2.       In a medium pot, add the vinegar and water to a boil

3.       Pour the boiling mixture slowly and carefully into the jar with the ingredients

4.       Cover the jar and allow to cool down to room temperature.  Then refrigerate
