FRIED BOLOGNA & MASHED POTATOES CASSEROLE
Ingredients:
· 2 LBS. Russet potatoes. Peeled and quartered
· Kosher salt and ground pepper
· 1 Stick unsalted butter
Main Recipe
· ¾ Cup Heavy cream
· 8 Slices of bologna
· 1 Onion, chopped
· 11/2 Cups Shredded cheddar cheese
Directions
Mashed Potatoes
1. Place the potatoes in a large pot and cover with cold water. Salt the water band bring to a boil. Reduce heat to medium and simmer until potatoes are soft. About 30 minutes
2. Drain the potatoes. Mash the potatoes with a potato masher. Add butter, cream. Salt and pepper
Main Recipe
1. Grease a 11/2 quart baking dish
2. Brown the onions and add the bologna to brown
3. Layer the bottom level of the baking dish with mashed potatoes, add onions, cheese and bologna
4. Add the top layer of the baking dish with mashed potatoes, add onions, cheese, and bologna
5. Bake in a pre-heated—350 Degree F oven for about 30 minutes
