SMOKED SAUSAGE CHIMICHURRI BAGUETTE

Ingredients

—1 PK-6 Links: Queen City Sausage - Smoked Sausage or favorite variety

—1 French baguette

—3/4 Cup Extra virgin olive oil

—2 TBLS Olive oil for sausage browning

—1 Shallot, finely chopped

—1/2 Cup Red wine vinegar

—1/2 Cup Fresh cilantro, finely chopped

—1/4 Cup Finely chopped parsley

—2 TBLS Finely chopped fresh oregano leaves

—3-4 Garlic cloves.  Finely chopped

—1 TBLS Kosher salt

—1 TSP Coarse ground pepper

—1 TSP Crushed red pepper flakes

Directions

—Combine the shallot, garlic, red wine vinegar, and salt in a medium bowl.  Let sit for     10 minutes

—Stir in cilantro, parsley, and oregano

—Add the olive oil, pepper, and crushed red peppers.  Stir to blend

—Cut the sausages in half lengthwise, add to small skillet, medium-low heat To brown

—Slice the baguette.  Optional: Toast the bread

—Add the sausages to the bread and top with the chimichurri sauce

Yield: 4 Sandwiches
