Beef Sausage Artichoke Pasta

Ingredients
1 PK, 14 OZ Queen City Sausage—Beef Smoked Sausage. Slice on the bias into ¼” pieces
2 Jars—12 OZ Artichokes. Drained
1 LB Pasta—Fettuccini or wide pasta
1/3 Cup Extra Virgin Olive Oil
10 OZ Portabella Mushrooms
10 OZ Shredded Asiago Cheese (Parmesan works too)
½ Red Onion—Sliced
1 medium tomato–Sliced
2 TBS Minced Garlic
1 TBS Coarse Ground Pepper
Yields 4-5 Servings


Instructions
Boil the pasta to soften per package instructions. Medium Skillet, medium-low heat. Add the olive oil, sausages, onions, mushrooms, and pepper to brown. Add the artichokes. Stir to blend. Add the pasta. Blend in thoroughly. Add the cheese to coat all ingredients. Add tomato slices to top.
