Wicked Jalapeno Hot Sausage with Scallops
Ingredients
1 PK-14OZ Wicked Jalapeno Hot Sausage or any favorite Queen City sausage—diced.
1 LB Wild Caught Sea Scallops
2 PKS-8.5 OZ Seeds of Change Organic Quinoa & Brown Rice
1 LB Fresh, Organic Spinach
4 OZ Duck Sauce or blend soy sauce with orange marmalade
3 OZ Craisins
3 OZ Extra Virgin Olive Oil
1 TBS Coarse Ground Pepper
Yields 4-5 Servings
Instructions
Medium skillet—medium-low heat. Add the olive oil and diced sausages to lightly brown. Microwave the rice according to package instructions. Add the scallops to lightly brown. Do not over cook. Add the spinach to soften. Add the Craisins. Top plated dishes with Duck Sauce.
