Best Beef Smoked Sausage, Peppers, and Sesame Rice
Ingredients
1 PK Queen City Sausage SK Beef Smoked Sausage (6 Links-cut into strips)
2 Cups uncooked rice. Follow package instructions for water and cooking.
¾ Cup of low sodium soy sauce
3 Red bell peppers, sliced
¼ Cup honey
1 Ea. Zucchini. Cut into long slices
2 TBL Gochujang (Korean chili paste)
1 inch fresh ginger grated
2 Cloves of garlic, chopped or grated
4 Green onions chopped
4 TBL Sesame oil
½ Cup chopped basil
¼ Cup toasted sesame seeds
Serves 6
Instructions
Prepare rice according to package instructions. When complete, stir in 2 TBL sesame oil and sesame seeds. Keep covered. Medium skillet, medium low heat, add 1 TBL sesame oil and beef sausage slices to brown. Remove and keep warm. Sauce: Mix soy sauce, honey, and Gochujang. Add 1 TBS sesame oil to skillet. Medium -low heat. Add bell peppers, ginger, green onions, and garlic. Add the sauce. Add the beef sausages and stir. Finish with the basil. Add the rice to the bowls and top with the beef sausages and vegetables.
