Grilled Sausage and Pork Tenderloin Fajitas
Ingredients
1 Pack, 14 OZ Queen City Sausage Wicked Jalapeno Hot Sausage, or favorite QCS sausage
1 LB. Marinated Pork Tenderloin. We find that the marinated to be extremely moist and tender. We use Italian variety or similar as the marinade base
8 Tortillas or flatbread
½ Red Onion. Sliced
8 OZ Fresh Spinach
6 OZ Italian Dressing
2 Medium Tomatoes. Sliced
Ground Pepper
Yields 8 Servings
Instructions
Preheat the grill to medium-high. Mix the Italian dressing with the sliced onions and ground pepper. Add to a small pan for the grill. This mixture is used to baste the pork tenderloin as it grills and apply to the tortillas at the end. Add the pork to the grill for about 15 minutes, turning and basting every 5 minutes. Baste with spoon portions. Cook until pork reaches 165 degrees internal temperature, using a meat thermometer. Once the pork is done, remove and let rest for 10 minutes before slicing. Immediately add the sausages to the grill. Slice the sausages into ½” slices and slice the tenderloin in ¼” slices. Reduce the grill heat to medium-low. Add the Tortillas to the grill to warm. Add Italian dressing, spinach, and sliced tomatoes to tortillas. Add the sausage and tenderloin slices.
