Hot Sausage, Bok Choy, Mushroom Stir Fry

Ingredients
1 Pack, 14 OZ, Queen City Sausage Wicked Jalapeno Hot Sausage or favorite QCS sausage
8 Pieces of Baby Bok Choy
10 OZ Portabella or fancy mushrooms. Sliced
½ Red Onion. Sliced
6 OZ Soy Vey-Veri Veri Teriyaki Marinade & Sauce (Less Sodium), or favorite
2 OZ Olive Oil
1 OZ Fresh Ground Pepper


Instructions
Medium skillet. Medium heat. Add olive oil. Slice the sausages into ¼” pieces. Cut on the bias. Add to skillet and brown. Add onions and mushrooms to brown with sausages. Add the Teriyaki marinade. Stir. Slice the bottoms off the bok choy. Cut the bok choy down the center. Add to the skillet. Cover and simmer until very soft but not over cooked.
