Smoked Sausage Meatballs
Ingredients
3 EA Links: Queen City Sausage Skinless Smoked Sausage (Metts)–diced
1 ½ LB Ground Pork
¾ LB Ground Chuck
3 Eggs—beaten
1 ¼ Cup Grated parmesan cheese (blend in Romano and Asiago too!)
1 Cup bread crumbs
½ Cup diced onions
3 OZ Olive oil
1 TBS Coarse ground pepper
1 TSP Sea salt
Yields 24-30
Instructions
Combine diced sausage links, pork, chuck, bread crumbs, salt, pepper, onions, and eggs in a large bowl. Mix well. Large skillet—medium-low heat. Add Olive oil to coatForm the batter into golf ball sized pieces. Add to skillet. Cover. Rotate meatballs often to thoroughly brown. Oven: Two baking sheets lined with foil. Coat with olive oil. 400 degrees. 12—15 minutes.
