Ultimate Smoked Sausage Burrito
Ingredients
1 PK Queen City Sausage Smoked Beef Sausage (Or Favorite QCS Variety)–Diced
1 PK OLE Xtreme Wellness High Fiber Tortilla Wraps (8 Wraps)
1 Each 15.25 OZ Can Black Beans
8 Large Eggs
10 OZ Salsa
1 Red Onion. Sliced
6 OZ Sour Cream
2 TBS Olive Oil
2 Ripe Avocados
1 TPS Coarse Black Pepper
1 Bag of Favorite Blue Corn Chips
2 TBS Corn Starch
2 TBS Butter
Serves 5-8
Instructions
Medium skillet, medium heat. Add oil, pepper, and sausages. Brown. Add salsa and black beans. Low heat. Cover. Scramble eggs and add in the corn starch. In a second skillet, heat the scrambled eggs. Remove. Cover or wrap in foil. Clean skillet, heat to very low, coat with butter, add the wraps 2 -3 at a time, flat. Begin assembling: Sausage, salsa and black bean mixture. Next add scrambled eggs. Add avocados. Add onions. Finish with sour cream.
