Baby Arugula with Smoked Sausage, Asparagus, and a Fried Egg

Ingredients
3 Links—Queen City Sausage – Smoked Sausage
8 OZ Asparagus tops
1 Medium zucchini, sliced and quartered
16 OZ Baby arugula
4 OZ Sliced peppers
4 Eggs
5 OZ Braggs Organic Dressing and Marinade Vinaigrette
2 Cloves of garlic, diced
2 OZ Olive oil
Yields 4 servings


Instructions
Medium non-stick skillet. Medium low heat. Add olive oil, sausages, asparagus, zucchini, and garlic to lightly brown. Fry 4 large eggs, sunny side up. In four bowls, add the arugula and peppers evenly. Add the sausages, asparagus, zucchini, and garlic. Top with egg. Add dressing.
