Andouille and Shrimp Stir Fry Delight

Ingredients
10 OZ Queen City Sausage Smoked Andouille or favorite Queen City sausage. Sliced
1 LB. Peeled & deveined Argentine raw shrimp. Note: These shrimps are special. So full of flavor
1 ½ Cup of rice. 2 cups water. Follow package cooking instructions
6 OZ Shredded carrots
6 OZ Portabella mushroom
½ Onion, sliced
4 TBS Soy sauce
4 OZ Orange marmalade
2 OZ Olive oil
1 TBS Coarse ground pepper
Yields 5-6


Instructions
Medium-large skillet. Medium-low heat. Add oil, pepper and sausages to brown. Add onions, mushrooms and carrots to soften. Add soy sauce and orange marmalade. Stir thoroughly. Add rice. Add shrimp to gently cook. Do not overcook. Remove and serve immediately.
