Smoked Sausage Polenta with Mango Relish

Ingredients
3 Links-Queen City Sausage, Beef Smoked Sausage. Cut in half, 1/2” slices
1 Roll 16 OZ Organic Ancient Harvest Polenta. Slice ½” thick
1 Can, 15 OZ Corn
2 Whole mangos. Diced
8 OZ Favorite salsa
½ Cup of Cilantro. Chopped
¼ Red onion. Diced
2 OZ Olive oil
Yields 4 Servings

Instructions
Medium size, non-skid skillet, medium low heat. Add olive oil and polenta slices to lightly brown. Remove, wrap in foil to keep warm. Add olive oil and sausages to brown. Quickly add the salsa, corn, onions, mango, and cilantro to gently warm. Blend and serve by applying to the polenta.
