Smoked Sausage Potato Egg N Nest
Ingredients
16 OZ Shredded Idaho potatoes
3 Links-Queen City Sausage Skinless Smoked Sausage--Diced
3 TSP Diced green onions
6 TBS Flour
2 TBS Finely chopped parsley
4 Egg whites. Save the yokes for the centers
½ TSP Salt
½ TSP Pepper
4 OZ Olive oil
Yields 4 Servings
Instructions
Soak the shredded potatoes in cold water to release starch. Drain. Brown the sausages in a medium, non-stick skillet with 1 OZ of olive oil. Remove. Mix the potatoes, flour, onions, sausages, pepper, salt, and egg whites. Blend thoroughly. Non-stick skillet, medium heat, add the olive oil, add the batter into a round patty shape, keeping the center open, add the egg yolks, one by one. Flip. Serve immediately.
