Smoked Sausage Walking Tacos

Ingredients
4 Links—Queen City Sausage Wicked Ghost Pepper sausage of favorite QCS sausage. Diced
1 Jar, 16 OZ Mrs. Renfro’s Mango Habanero Salsa or favorite
1 Can, 15 OZ Black beans. Drained
8 OZ Roasted red peppers. Diced
1 PK. 1.25 OZ Ortega Taco Seasoning Mix
10 OZ Shredded sharp cheddar cheese
6 OZ Sour cream
½ Head lettuce. Shredded
2 OZ Olive oil
8 Snack sized Fritos and Doritos
Yields 8 Walking Tacos

Instructions
Medium size, non-stick skillet. Medium-low heat. Add Olive oil to skillet. Add sausages to brown. Add salsa, black beans, and red peppers. Add the taco seasoning. Stir and blend. Now take each chip package and crush the contents by hand. Open packages. Add lettuce, taco mix, sour cream, and top with cheddar cheese.
