Southwest Style Sausage and Bean Stew

Ingredients
1 PK-- 14 OZ Queen City Sausage—Hot Beef Smoked Sausage--Sliced
1 Can—15.8 Bush’s Great Northern Beans
1 Can-Hunts Fire Roasted Tomatoes
½ Cup Bacon—Diced
1 Medium onion—Diced
½ Cup Water
1 Small can tomato paste
2 TBL Spice Rub. Eli’s BBQ Original Spice Rub used here
5 Cloves of garlic—minced or pressed
2 TBS Olive oil
Salt and pepper to taste
Yields 5-6 Servings

Instructions
Medium skillet, medium-low heat. Add olive oil and sausages to brown + onions. Add tomatoes, tomato paste and beans. Add water, garlic, spice rub, and bacon. OK to add a touch of bacon grease for additional flavor. Let simmer for 8 minutes.
