Southwestern Ghost Pepper Smoked Sausage Chili

Ingredients
1 PK—5 Links of Queen City Sausage Ghost Pepper Smoked Sausage. Diced
12 OZ Sharp cheddar cheese. Shredded
2 Cups Sweet onions. Diced
2 Cloves Garlic. Minced
2 TBS Olive oil
2 TBS Chili powder
2 Tsp dried oregano
2 TBS Tomato paste
1 Red pepper. Sliced
1 28 OZ Can diced tomatoes
15.5 OZ Can of Northern White Beans or pinto
2 Cups Vegetable broth
1 Avocado. Sliced
½ Cup Cilantro leaves
½ Cup Jalapenos. Sliced
½ TSP Salt
Yields 5-6 Servings

Instructions
Large stock pot. Medium low heat. Add olive oil, and diced ghost pepper sausages. Brown. Add vegetable broth, tomato paste, and diced tomatoes. Stir to blend. Add onions, chili powder, oregano, and beans. Simmer for 15 minutes. Add jalapenos, salt, cilantro leaves, and red pepper. Simmer for 5 minutes. Garnish each bowl served with avocado slices and cheese.
