BURNT BOLOGNA ENDS and PIECES

Ingredients

·         1.5 LBS Queen City Sausage—Garlic Bologna

·         4 OZ Montgomery Inn BBQ Sauce—as a dipping sauce

·         1 Packet Cincinnati Recipe Chili spice or favorite rub

·         3 OZ Olive oil

Directions

1.       This recipe is versatile.  You may grill, pan fry, or broil the ends and pieces

2.       Purchase the bologna unsliced.  Slice into 1.5” cubes.  Note: We used the entire bologna roll. Used the ends.  Saved the middle and made Bologna Sticks!!  Same recipe

3.       Regardless of the heat source, apply olive oil to the pans or grill grates

4.       Coat the pieces in olive oil and dip into a small bowl of the spice/rub

5.       If grilling, use the grates or pan.  Medium heat

6.       If broiling, use a cookie sheet lined with parchment paper.  Low broil

7.       If stove top, medium low heat

8.       The key is controlling the heat.  Only a char is required
