Caprese Cold Sausage Pasta Salad

Ingredients—Dressing

·         1 Cup Olive oil

·         ½ Cup Red wine vinegar.  White vinegar may be substituted

·         ¼ Cup water

·         1 TBS Honey

·         1 TBS Lemon juice

·         1/3 Cup Parmesan cheese

·         2 Cloves minced garlic

·         2 TSP Parsley

·         1 TSP Basil-dried

·         ¼ TSP Oregano-dried

·         Salt and pepper to taste

Ingredients—Pasta Dish

·         1 LB Pasta.  We used Super Greens Ronzoni.  Follow package directions to cook.  Cool pasta with cold running water immediately when done

·         3-4 Links—Queen City Sausage-Skinless Smoked Sausage—sliced in ½ pieces

·         2 Cups Cherry grape tomatoes.  Halved

·         8 OZ Fresh Mozzarella cheese balls or favorite cheese chunked

·         ½ Cup Black olives or green

·         ½ Cup Fresh parsley—finely chopped

·         ½ Cup Mild banana peppers-optional

Directions:

1.       Combine all dressing ingredients and whisk well.

2.       Combine dressing with the pasta and mix thoroughly.

 

Yield: 6 Servings
