PHILLY CHEESE SAUSAGE STUFFED PEPPERS

Ingredients

·         4 Links: Queen City Sausage Smoked Sausage.  Diced

·         4 Green peppers, cut in half and seeds removed

·         ½ Red pepper.  Diced

·         8 OZ Mushrooms.  Diced

·         10 OZ Pepper Jack or favorite cheese

·         2 TBS Olive oil

·         1 Small onion. Sliced

·         Salt and pepper as desired

Directions

1.      Preheat oven to 400 F.  Cut green peppers in half and remove the seeds.  Drizzle with one TBLS olive oil.  Salt and pepper.  Bake for 10 minutes in a 9” X 13” oven safe dish covered with aluminum foil to soften

2.      In a medium, non-stick skillet, add 1 TBLS olive oil.  Add diced sausages, mushrooms, red pepper, and onion to brown

3.      Remove the green peppers from the oven.  Add the sausage mix from the skillet to each of the green peppers and cover with cheese

4.      Bake for 15 minutes or until the cheese is melted

5.      Remove and serve

Yield: 8 Servings
