SMOKED SAUSAGE CAPRESE GARLIC BREAD

Ingredients

·         2 Links—Queen City Sausage, favorite variety.  Sliced and quartered

·         1 Loaf Ciabatta bread, sliced thick

·         8 OZ Mozzarella cheese slices

·         4 OZ Asiago or Parmesan cheese

·         4 OZ Butter-soft

·         2 TBS Fresh thyme—chopped fine

·         1 Cup Cherry tomatoes.  Cut in ½

·         1 Cup Fresh basil

·         4 Cloves—minced garlic

·         Sea salt and coarse ground pepper

·         1 OZ Olive Oil

Directions

1.       Brown the sausage in a small skillet with olive oil and set aside

2.       Set grill to medium high.  Butter one side of bread and lightly toast-remove

3.       Lay out the bread slices on a sheet pan.  Apply the butter to each slice.  Layer on the garlic and thyme.  Add the mozzarella slices and dust on the asiago

4.       Add the basil and cherry tomatoes

5.       Apply salt and pepper

6.       Set grill to medium high.  Place in the bread on the sheet pan to allow cheese to melt and bread to toast lightly.  About 3 minutes.  Broiler may also be used.  2-3 minutes
