SMOKED SAUSAGE SPINACH and RICOTTA WRAPS
Ingredients
· 2 Links-Queen City Sausage: Smoked Sausage. Browned and sliced
· 2 Deli wraps. 6” or so
· 1 OZ Butter
· 2 OZ Olive oil
· 1 Small onion, diced
· 8 OZ Baby spinach
· 3 OZ Double cream
· 2 OZ Ricotta cheese, crumbled
· 1 OZ Cheddar cheese
· 1 TSP Fresh lime juice
· Pepper and salt to taste
Directions
1. Preheat oven to 325
2. Saucepan, low heat, melt butter, add onions, to soften, then add spinach. Cover and cook for 2-3 minutes. Add lime juice and double cream. Season with pepper and salt
3. Warm booth sides of the wrap in a dry frying pan
4. Remove warmed wraps. Spoon in 2/3 of spinach mixture. Add ricotta cheese on top
5. Fold wrap in half, spoon in remaining mixture on one half and fold again, forming a triangle
6. Top with grated cheese. Place on baking trays and reheat for 2 minutes
Yield: 2 Wraps
