Smoked Sausage Slow Cooker Lasagna Soup

Ingredients

·         1 PK—14 OZ SK Queen City Sausage, Smoked Sausage (Or favorite QCS variety), diced

·         1 Medium onion, diced

·         2 Medium carrots, chopped

·         2 Cups sliced mushrooms

·         4 Garlic cloves, minced

·         2 Cans Hunts, Fire Roasted Diced tomatoes, 14 OZ each

·         1 Carton, chicken broth, 32 OZ

·         1 Can -  6 OZ Tomato paste

·         6 Lasagna noodles, broken into 1.5 OZ pieces

·         2 Cups chopped fresh spinach

·         1 TBS Italian seasoning

·         ½ Cup parmesan cheese, freshly ground

·         2 OZ olive oil

·         Salt and pepper to taste

Directions

1.        Large skillet, medium-low heat, add olive oil, and sausages to brown 

2.       In the same skillet, add the onions, carrots, and mushrooms to brown

3.       Transfer the skillet ingredients to a 5-6 quart slow cooker/crock pot

4.       Stir in broth, tomatoes, tomato paste

5.       Cook on low 4-6 hours

6.       At about 1 hour before serving, add the spinach and garlic

7.       Top each serving with freshly ground parmesan cheese
