Twisted Green Chili Mac and Cheese with Smoked Sausage

Ingredients

—1 PK-6 Links of Queen City Sausage Smoked Sausage.  Slice into 1.5” pieces and skewer

—1 LB Rotini pasta.  Cook according to package instructions

—5 TBLS Butter

—1 Large onion, chopped

—3 Cloves of garlic, minced

—1.5 Cups chopped roasted green chilies

—5 TBLS All purpose flour

—2 Cups half and half

—1/2 Cup Whole milk

—2.5 Cups Shredded white cheddar cheese

—1/4 Cups chopped cilantro or parsley

—1/2 Cup Breadcrumbs

Directions

  1. In a large sauce pan, heat the butter over medium high heat.  Add the onions and sauté for about 5 minutes.  Stir frequently.  Add garlic and cook for about one more minute.  Preheat oven to 350F. Grill, or pan fry the sausages

  2. Add the flour to the pan and blend in throughly.  Lower the heat to medium, and let the flour cook, stirring often to achieve a light brown color.  About 4-5 minutes

  3. Stir in the green chilies and oregano.  Next begin adding in the half and half a little at a time.  Stir often.  Let simmer before adding the next portion.  Add milk too

  4. Now start slowly incorporating the cheese.  Add salt and pepper to taste

  5. Stir in the cooked pasta and move to a oven safe casserole dish.  Top with breadcrumbs

  6. Bake for about 20-25 minutes or until the breadcrumbs begin to brown.  Let sit for 5 minutes before serving

  7. Serve the sausages on the side
