Bacon Wrapped Smoked Sausage Shots

Ingredients

—1 PK Queen City Sausage Smoked Sausage links.  Cut into 1/3 pieces

—1 PK Wright’s Thick Sliced Bacon

—8 OZ Cream cheese

—4 OZ Cheddar cheese—shredded

—1 TBLS Grippo’s Gourmet Bar-B-Q spice or favorite rub

—1 TBLS Brown sugar

—Jalapeño slices

—Toothpicks

Directions

  1. Combine the cream cheese, 1/2 of Grippo’s BBQ spice, and cheddar cheese in a medium bowl.  Stir throughly

  2. Fill a quart Ziplock baggie with the cheese/spice mixture.  Cut a 1/4” slice off the corner to use as a piping bag

  3. Cut the bacon slices in half

  4. Wrap the bacon around the sausages, ensuring a 1/2” open end at the top.  Secure bacon with a toothpick

  5. Fill the open end with the cheese mixture.  About 1/2 TSP each.  Top with jalapeño slice

  6. Preheat oven to 350F.  Cover a baking sheet with parchment paper or foil.  Place the shots on the pan standing up

  7. Bake for 45-55 minutes, until crispy
