The Mother of All Sauces

A great sauce is the foundation of every dish.  This special sauce is ideal for pasta, stews, and so much more.

Ingredients

—6 OZ Queen City Sausage, Smoked Cottage Ham (Butt)

—4 Cans Whole plum tomatoes.  15.8 OZ

—5 Links-Queen City Sausage Dinner Franks or favorite

—2 Carrots.  Chunked

—1 Onion.  Diced

—12 Cloves of garlic.  Diced

—4 TBLS Olive oil

—Salt and pepper to taste

Directions

  1. Large stock pot.  Add oil to coat the bottom.  Add the sausages to brown.  Then remove.  Cut in half.  Add remaining oil and vegetables.  Do not attempt to brown the vegetables.  Turn on the heat to medium-low.  Cook until mostly soft.

2.    In a separate bowl, add the tomatoes.  Submerge your hands in the tomatoes and squeeze to break up the tomatoes.  Submerging your hands reduces splash.

3.    Back to the vegetables.  Crush-mash the vegetables.

4.     Add the tomatoes.  Bring to a boil, then reduce to low. Cook for 2-3 hours. Stir occasionally

5.     Add the sausages in for the last 30 minutes. Sausages are fully cooked

6.     Black pepper and salt.
