Smoked Sausage Tamale Pie

Smoked sausage, cottage ham, ground beef join an array of flavorful ingredients!

Ingredients

—2 Links Queen City Sausage Smoked Sausage or favorite such as Wicked Ghost.  Sliced thin or chunked

—3 OZ Queen City Sausage Cottage Ham (Butt).  Sliced thin

—1 LB Ground beef

—1 Can-15OZ Enchilada sauce

—1 PK-8.5 OZ Package of cornbread mix.  Requires milk and egg

—21/2 Cup Frozen corn.  Thawed and divided

—1 Onion.  Chopped

—1 Red bell pepper or use assorted mini peppers.  Sliced thin

— 6 OZ Cheddar.  Shredded

—3 oz Diced hatch or jalapeño peppers

—2 TBSP Olive oil

—2 Cloves garlic

—Salt and pepper

—4 TSP Chili powder

Directions

  1. Use a 12” cast iron skillet or use a skillet to sauté in and transfer to a baking dish

  2. On the stovetop, large skillet, medium low heat, add olive oil

  3. Add the onions, peppers, salt, and pepper to soften

  4. Add beef to brown

  5. Stir in ground beef to brown

  6. Add corn, 2 TSP chili powder and 1 cup of corn, enchilada sauce, and 1 cup cheddar.  Remove from heat

  7. Mix cornbread according to box instructions.  Add chilies and 1/2 cup cheddar, 2 TSP chili powder, and 1 cup of corn to the batter

  8. Preheat oven to 375 degrees F

  9. Add the meat mixture to a baking dish if using and add the corn bread batter to cover the ingredients

  10. Bake until the cornbread it cooked through.  About 40-45 minutes.  Serve immediately
