Cajun Sausage and Shrimp with Dirty Rice
Ingredients
1 Lb. Queen City Sausage Smoked Andouille Sausage. Slice on the bias, ½” thick
10 OZ Raw shrimp (Raw Argentine or Gulf Coast is preferred for full flavor).
2 EA-8 OZ PK Seeds of Change Organic Quinoa & Brown Rice
3.5 Cups beef broth
1 Medium diced onion
1 Bell pepper diced
1 Cup diced celery
3 TBS Olive Oil
2 Tbs Cajun spice
1 TBS coarse ground pepper
Yields 6 Servings
Instructions
Medium skillet-medium low heat. Add Andouille sausage to brown. Add onions, red pepper, celery, Cajun spice, and ground pepper to sauté. Add rice and beef broth. Simmer for 5 minutes. Reduce heat to low. Just before serving, add the raw shrimp. Be sure to not overcook the shrimp.
