Keto Beef Smoked Sausage Frittata

Ingredients
14 OZ PK Queen City Sausage Beef Smoked Sausage—4 Links–diced
10 Large eggs
3 OZ Sundried tomatoes (Bella Sun Luci-Kroger—Sun Dried)
½ Red bell pepper
3 Scallions – Diced
3 OZ Butter
2 OZ Olive oil
1 TBS Coarse ground pepper
½ TSP Sea salt
Serves 4


Instructions
Medium size, non-stick skillet, medium heat. Add olive oil Add the sausage, sun dried tomatoes, scallions pepper, and salt. Sauté. Scramble the eggs—hold. Remove the skillet sauté ingredients, wrap in foil to keep warm. Wipe skillet clean. Add butter to melt evenly. Add the eggs and follow with the sauté ingredients. Spread evenly. Cover the skillet and let the contained heat finish setting the frittata.
