KY Hot Brown with Smoked Cottage Ham
Ingredients
8 OZ Queen City Sausage Smoked Cottage Butt (Ham). Thin sliced
6 OZ Heavy Cream
6 OZ Whole milk
½ Cup Romano cheese
4 Slices of Texas Toast
4 Slices of crispy bacon
2 Roma tomatoes. Sliced
Salt, pepper, paprika, nutmeg
2 OZ Olive oil
Yields 2 Sandwiches
Instructions
Medium skillet, medium low heat, melt the butter and slowly whisk in flour to form into a thick paste-roux. Continue to cook the roux over low heat, constantly stirring. Whisk heavy cream and whole milk into the roux and cook on medium low until it simmers. Remove the heat and add in the Romano cheese until the sauce is smooth. Add the salt, pepper, and nutmeg. Take the slices of Cottage Ham and add to a skillet with olive oil to gently warm. Remove. Take the four slices of Texas Toast and add to the skillet to brown and build the sandwich. Add the Cottage Ham to two of the bread slices. Add tomatoes. Add bacon. Top with the roux. Garnish with paprika and serve immediately.
