Beef Smoked Sausage Tortellini Pasta Salad

Ingredients

4 Links--Queen City Sausage Beef Smoked Sausage.  Diced
4 Packs—20 OZ Refrigerated tortellini pasta
12 OZ Pepperoni.  Quartered
4 Cups Cherry tomatoes.  Halved
16 OZ Mozzarella cheese.  Slice into bite sized pieces
1 Cup Red onions.  Diced
1 Cup Black olives
1 Cup Pepperoncini slices
1 Cup Extra virgin olive oil
1/3 Cup Red wine vinegar
6 Cloves Fresh garlic.  Minced
½ TBS Salt
1 TBS Sugar
1 TBS Dried oregano
1 TBS Dried parsley
1 TBS Cracked pepper
Yields 12 Servings


Instructions

  1. Cook the tortellini according to package instructions.  Drain, run cool water to remove heat

  2. Add all ingredients to a large bowl.  Mix well by hand

  3. Add the cooled tortellini to the mixture and blend

  4. Refrigerate, or serve immediately
