Homemade Sausage Noodle Soup

Ingredients

—3 Links-Queen City Sausage—Smoked Sausages.  Cut into 1/2” pieces

—4 Cups Chicken broth (32 OZ.)

—2 Carrots.  1/2” slices

—2 Ribs of celery

—2 TBLS Olive oil

—2 TBLS Butter

—1/2 Sweet onion.  Diced

—Salt and pepper to taste

—1 TSP Dried parsley to garnish

—1/2 TSP Dried thyme

—6 OZ Dry egg noodles

Directions

  1. Heat the olive oil and butter in a soup pot or Dutch oven over medium-low heat

  2. Add in the carrots and celery to sauté for 3 minutes

  3. Add the onions then garlic

  4. Add all of the other ingredients excluding the noodles.  Bring to a boil then turn down the heat.  Add the noodles.  Simmer for 20 minutes.  Cook on low for and additional 20 minutes
