Ratatouille with Smoked Sausage

Ingredients

—3 Links Queen City Sausage-Smoked Sausage.  Sliced

—1 Eggplant, cut into 1” slices

—1/2 Acorn squash. Cut into 1” slices.  (Optional)

—1 Zucchini.  Cut into 1” slices

—2 Red bell peppers.  Cut into 1’ slices

—1 Red onion.  Diced

—4 Garlic cloves

—1 Can-14 OZ Diced tomatoes with juices

—1/2 Cup pepperoncinis

—1 TBLS Balsamic vinegar

—2 OZ Olive oil

Directions

  1. Large skillet, medium-low heat.  Add the olive oil and sausages to brown.  Remove and hold in a large bowl

  2. Add in the eggplant to brown.  Remove and hold in the large bowl

  3. Add the zucchini to lightly brown.  Salt and pepper

  4. Add the tomatoes, pepperoncinis, balsamic vinegar.  Simmer to thicken sauce

  5. Stir in the sausages and eggplant

  6. Partially cover the skillet and cook on low for about 30 minutes, stirring occasionally
