SMOKED SAUSAGE PARTY MUFFINS

Ingredients

·         3 – 4 Links Queen City Sausage, cut into quarters and quartered strips

·         2 Cups Pancake mix.  Best to use the “Just add water” variety

·         2 TBL Dijon mustard--sauce

·         2 TBL Honey—sauce

Instructions

1.      Large bowl, combine dry mix with water, stir until combined

2.      Quarter the sausages.  Slice some again into strips

3.      Add batter to a pre-greased muffin tin.  About ¾ full.  Insert the sausages in the center

4.      Pre-heat oven to 350 degrees F

5.      Bake for about 15-20 minutes

6.      Make the sauce with Dijon and honey

7.      Remove muffins when slightly browned
