Goetta Flatbread Breakfast Sandwich

Ingredients

—1 Roll of Goetta (1 LB.).  Sliced

—1 Package of Trader Joe’s Lavash Flatbread

—11/2 Cups Rice

—1/2 Cup Onions.  Diced

—1 Cup Black beans.  Drained

—1 Cup Spinach

—4 Eggs

—6 OZ Sharp cheddar cheese

Directions

  1. Cook the rice according to the package.  Let cool slightly

  2. Fry the eggs

  3. Warm the black beans and spinach

  4. Lay out the flatbread, building one at a time as follows:

     —Place the rice from one end to the other

     —Sprinkle black beans

     —Add spinach and onions

    —Add the goetta in chunks

    —Add the cheese

    —Add the an egg

    —Roll the flatbread closed and serve

NOTE:  Sour cream is an option!
