ONE PAN TAILGATE BRUNCH BAKE
Ingredients
—4 Links Queen City Sausage-Smoked Sausage. Cut into 1/2” Pieces
—1 LBS. Petite Medley Potatoes. Cut in Quarters or half
—6-10 Mini sweet peppers
—8 OZ. Hash browns
—4 Eggs
—8 OZ. Spinach
—10 OZ. Cherry tomatoes. Cut in half
—2 TBLS Olive oil
—1/4 TSP Paprika
—1/4 TSP Ground cumin
—1/4 TSP Chili powder
—Sriracha chili sauce to serve (Optional)
Directions
Preheat oven to 400 Degrees F.
Using a large sheet pan, spray or apply olive oil to coat. Add the potatoes, onions and peppers. Drizzle with oil. Add the spices. Place in the oven for 15 minutes
Add tomatoes and bake for another 10 minutes
Soften the spinach in the microwave for :30 seconds. Add to the sheet pan
Create 4 small pockets and then crack the 4 eggs to fill the spaces. Add the sausage slices. Return the pan to the oven for 4-5 minutes
Note: You can always add your favorite cheese to top.
Note: You can also create this using a flat top grill, just experiment in order to make sure the potatoes are softened
