Sausage Puff Pastry Pot Pie

Ingredients

—3 Links-Queen City Sausage, Smoked Sausage.  Diced

—3 Large carrots.  Chopped

—3 Cups Chicken stock

—3 Garlic cloves

—2 TBLS Olive oil

—1 Large onion.  Chopped

—1 Baking potato.  Peeled and chunked

—1/4 Cup All purpose flour

—1 Sheet Puff pastry.  Thawed

—1 Large egg.  Beaten

—Salt and pepper

Directions

  1. Preheat oven to 400 degrees F

  2. Use a large cast iron skillet.  Add the oil to coat.  Medium heat on stovetop

  3. Stir in the onions, garlic, carrots, potato, salt, pepper.  Cook to blend and soften ingredients

  4. Add in the flour to incorporate.  Pour in the stock.  Bring to a boil.  Stir in the sausage

  5. Remove the skillet from the heat, let cool slightly

  6. Layer the top of the filled skillet with the puff pastry sheets.  Trip around the edges to conform to the skillet

  7. Cut slits in the puff pastry for air vents

  8. Brush the puff pastry with The egg wash.  Top with sausage (Optional).

  9. Bake until filling is bubbling and the pastry is golden brown.  About 20 minutes or so.
