Smokey Tomato Baked Eggs and Sausage

Ingredients

—1/2 Cup Queen City Sausage, Smoked Sausage.  Crumbled

—8 Large Eggs

—14 OZ Diced tomatoes.  Fresh or canned

—3 OZ Parmesan, shaved

—1 Cup Spinach-fresh

—1 OZ Olive Oil

—1 Clove of garlic

—Salt and pepper to taste

—1 TSP Smoky paprika

Directions

  1. In a medium saucepan pan, add the olive oil, medium-low heat, brown the sausage crumbles

  2. Add the garlic and smoky paprika to the pan to blend flavors

  3. Add the tomatoes and simmer for about 5 minutes

  4. Add the spinach to soften

  5. Divide the skillet contents into 4 large, oven safe ramekins

  6. Crack 2 eggs into each of the ramekins

  7. Top with additional spinach leaves and Parmesan cheese

  8. Add salt and pepper

  9. Bake at 350 degrees F for 20 minutes for runny eggs.  30 minutes for more firm eggs
